Main Ingredients
- 2 cups Honeydew melon, diced Use organic if possible
- 1 cup Cucumber, diced Peeled and seeded
- ¼ cup Red onion, finely chopped
- 1 tablespoon Lime juice Freshly squeezed
- 1 tablespoon Fresh cilantro, chopped
- 1 teaspoon Salt To taste
In a mixing bowl, combine the diced honeydew melon, cucumber, and red onion.
Add the lime juice, chopped cilantro, and salt. Mix well.
Let the salsa sit for at least 10 minutes to allow the flavors to meld together.
Serve chilled with tortilla chips or as a topping for grilled fish or chicken.
