Ingredients 

Scallops

  • 12 pieces large scallops cleaned and patted dry
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • to taste salt and pepper

Polenta

  • 1 cup polenta
  • 4 cups water
  • 1 cup heavy cream
  • ½ cup Parmesan cheese grated
  • to taste salt

Topping

  • 2 tablespoon caviar

Instructions 

  1. 1. Heat olive oil in a skillet over medium-high heat. Season scallops with salt and pepper.
  2. 2. Sear scallops for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. 3. In a saucepan, bring water to a boil. Gradually whisk in polenta.
  4. 4. Reduce heat and cook, stirring frequently, until thickened. Stir in heavy cream and Parmesan cheese. Season with salt.
  5. 5. Serve scallops over polenta, topped with a small dollop of caviar.
