Parsnip Apple Leek And Carrot Soup Recipe

Main Ingredients
- 2 cups parsnips, peeled and chopped
- 1 cup apple, peeled and chopped
- 1 cup leek, cleaned and chopped
- 1 cup carrots, peeled and chopped
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Heat the olive oil in a large pot over medium heat.
Add the leeks and cook until softened, about 5 minutes.
Add the parsnips, apple, and carrots. Cook for another 5 minutes.
Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth using a blender.
Season with salt and pepper to taste. Serve hot.
