  • 2 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 cups New Mexico Hatch Chiles, roasted and chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans, drained and rinsed (15 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups beef broth

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
  4. Stir in the roasted Hatch Chiles, diced tomatoes, kidney beans, black beans, chili powder, cumin, oregano, salt, and black pepper.
  5. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 1 hour, stirring occasionally.
  6. Adjust seasoning to taste and serve hot.
