Ingredients

  • 2 large Portobello mushrooms
  • 2 tablespoon Olive oil
  • 1 teaspoon Balsamic vinegar
  • 2 slices Provolone cheese
  • 2 pieces Whole grain sandwich buns
  • 1 cup Arugula
  • 1 small Tomato, sliced

Instructions 

  1. 1. Preheat your grill pan over medium heat.
  2. 2. In a mixing bowl, combine olive oil and balsamic vinegar. Brush the mixture onto the Portobello mushrooms.
  3. 3. Grill the mushrooms for about 5-7 minutes on each side until tender.
  4. 4. During the last minute of grilling, place a slice of Provolone cheese on each mushroom to melt.
  5. 5. Toast the sandwich buns on the grill for a minute or two until lightly browned.
  6. 6. Assemble the sandwich by placing the grilled mushroom with melted cheese on the bottom bun. Top with arugula, tomato slices, and the top bun.
