Pumpkin And Tomato Bisque

Main Ingredients
- 2 cups Pumpkin puree
- 2 cups Diced tomatoes
- 1 cup Vegetable broth
- 1 cup Heavy cream
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive oil
- to taste Salt and pepper
1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
2. Add pumpkin puree, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
3. Use a blender to puree the soup until smooth. Return to the pot.
4. Stir in heavy cream and season with salt and pepper to taste. Heat through, but do not boil.
5. Serve hot, garnished with a drizzle of cream or a sprinkle of fresh herbs if desired.
