Quick Eggs Benedict With Chipotle Hollandaise Sauce
A quick and spicy twist on the classic Eggs Benedict, featuring a chipotle hollandaise sauce.

Hollandaise Sauce
- 3 units Egg yolks
- 1 tablespoon Lemon juice
- 1 cup Butter melted
- 1 teaspoon Chipotle powder
Eggs Benedict
- 4 units Eggs poached
- 2 units English muffins halved and toasted
- 4 slices Canadian bacon cooked
1. To make the hollandaise sauce, blend egg yolks and lemon juice in a blender until smooth.
2. Slowly add melted butter while blending until the sauce thickens.
3. Add chipotle powder and blend until combined. Keep warm.
4. Poach the eggs in simmering water until the whites are set but the yolks are still runny.
5. Toast the English muffins and place a slice of Canadian bacon on each half.
6. Place a poached egg on top of each bacon slice and drizzle with chipotle hollandaise sauce.
7. Serve immediately.
