- 6 eggs
- 1 cup heirloom tomatoes, chopped
- ½ cup ramps, chopped
- ¼ cup cream cheese, softened
- 1 tablespoon olive oil

Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk the eggs until well beaten. Add salt and pepper to taste.
Heat olive oil in a skillet over medium heat. Add ramps and cook until softened, about 3 minutes.
Add the chopped heirloom tomatoes to the skillet and cook for another 2 minutes.
Pour the beaten eggs into the skillet, stirring gently to combine with the ramps and tomatoes.
Dollop the cream cheese evenly over the egg mixture.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
Remove from the oven and let cool slightly before slicing and serving.
