Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 can diced tomatoes (14 oz)
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt and pepper
  • 1 handful fresh cilantro, chopped for garnish

Instructions 

  1. 1. Rinse the red lentils under cold water until the water runs clear.
  2. 2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until soft.
  3. 3. Add the minced garlic and ginger, and cook for another minute.
  4. 4. Stir in the curry powder, ground cumin, and ground turmeric. Cook for another minute until fragrant.
  5. 5. Add the diced tomatoes, vegetable broth, and red lentils. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.
  6. 6. Stir in the coconut milk and season with salt and pepper to taste. Simmer for another 5 minutes.
  7. 7. Serve hot, garnished with fresh cilantro.
