Ingredients 

Main Ingredients

  • 1 cup Red Lentils
  • 2 medium Potatoes peeled and diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 4 cups Vegetable Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the diced potatoes, red lentils, ground cumin, and ground turmeric. Stir to combine.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to a simmer and cook for about 30 minutes, or until the lentils and potatoes are tender.
  6. Season with salt and pepper to taste. Serve hot.
