Roasted Apricots With Ricotta And Honey

Main Ingredients
- 8 Apricots, halved and pitted
- 1 cup Ricotta cheese
- 2 tablespoon Honey
- 1 tablespoon Olive oil
- 1 pinch Salt
Preheat your oven to 375°F (190°C).
Place the halved apricots on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with a pinch of salt.
Roast in the preheated oven for about 15 minutes, or until the apricots are tender and slightly caramelized.
While the apricots are roasting, mix the ricotta cheese in a bowl until smooth.
Once the apricots are done, let them cool slightly. Serve them with a dollop of ricotta cheese and a drizzle of honey on top.
