Roasted Asparagus And Red Onion Quesadillas

- 1 bunch Asparagus trimmed
- 1 Red Onion sliced
- 2 tablespoon Olive Oil
- 8 Flour Tortillas
- 2 cups Shredded Cheese cheddar or your choice
- to taste Salt and Pepper
Preheat oven to 400°F (200°C).
Toss asparagus and red onion with olive oil, salt, and pepper. Spread on a baking sheet.
Roast in the oven for 15-20 minutes until tender.
Heat a skillet over medium heat. Place a tortilla in the skillet, sprinkle with cheese, add roasted vegetables, and top with another tortilla.
Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted.
Repeat with remaining tortillas and filling. Cut into wedges and serve.
