- 1 lb Gemstone potatoes halved
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper freshly ground
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the halved gemstone potatoes, olive oil, salt, black pepper, garlic powder, and paprika. Toss until the potatoes are evenly coated.
Spread the potatoes out in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.
