  • 1 lb radishes trimmed and halved
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoon unsalted butter
  • 1 tablespoon fresh parsley chopped

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss the radishes with olive oil, salt, and pepper.
  3. Spread the radishes on a baking sheet in a single layer.
  4. Roast for 20 minutes, or until the radishes are tender and golden brown.
  5. While the radishes are roasting, melt the butter in a small saucepan over medium heat. Cook until the butter turns golden brown and has a nutty aroma, about 5 minutes.
  6. Remove the radishes from the oven and toss with the brown butter and chopped parsley.
  7. Serve immediately.
