Roasted Radishes With Brown Butter

- 1 lb radishes trimmed and halved
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoon unsalted butter
- 1 tablespoon fresh parsley chopped
Preheat your oven to 425°F (220°C).
In a mixing bowl, toss the radishes with olive oil, salt, and pepper.
Spread the radishes on a baking sheet in a single layer.
Roast for 20 minutes, or until the radishes are tender and golden brown.
While the radishes are roasting, melt the butter in a small saucepan over medium heat. Cook until the butter turns golden brown and has a nutty aroma, about 5 minutes.
Remove the radishes from the oven and toss with the brown butter and chopped parsley.
Serve immediately.
