Main Ingredients
- 2 large red bell peppers
- 1 cup Greek yogurt
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice fresh
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
1. Preheat your oven to 450°F (230°C).
2. Place the red bell peppers on a baking sheet and roast for 20 minutes, turning occasionally, until the skins are charred.
3. Remove the peppers from the oven and place them in a bowl. Cover with plastic wrap and let them steam for 10 minutes.
4. Peel the skins off the peppers and remove the seeds.
5. In a blender, combine the roasted peppers, Greek yogurt, minced garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth.
6. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
