- 1 lb Shallots peeled
- 1 lb Cipollini Onions peeled
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper freshly ground
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a mixing bowl, toss the shallots and cipollini onions with olive oil, salt, and black pepper.
Spread the onions evenly on the baking sheet.
Roast in the preheated oven for 35-40 minutes, or until the onions are tender and caramelized.
Remove from the oven and serve warm.
