Ingredients

  • 1 large butternut squash peeled, seeded, and cubed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups mixed greens
  • ½ cup crumbled goat cheese
  • ¼ cup chopped walnuts toasted

Dressing

  • 3 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and black pepper on a baking sheet.
  3. Roast for 25-30 minutes, or until tender and slightly caramelized. Let cool.
  4. In a mixing bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper to make the dressing.
  5. In a large bowl, combine the mixed greens, roasted squash, crumbled goat cheese, and toasted walnuts.
  6. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
