Main Ingredients

  • 2 large Sweet Potatoes peeled and diced
  • 1 pint Shishito Peppers stems removed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and black pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
  4. In the same mixing bowl, toss the shishito peppers with the remaining olive oil.
  5. Add the shishito peppers to the baking sheet with the sweet potatoes and roast for another 10 minutes.
  6. Remove from the oven and serve hot.
