Roasted Veggie Sweet Salsa

Main Ingredients
- 2 cups Cherry Tomatoes halved
- 1 Red Bell Pepper chopped
- 1 Yellow Bell Pepper chopped
- 1 Red Onion quartered
- 2 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 tablespoon Honey
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 tablespoon Lime Juice freshly squeezed
- 1 cup Cilantro chopped
Preheat your oven to 400°F (200°C).
Place the cherry tomatoes, red bell pepper, yellow bell pepper, and red onion on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.
Roast in the oven for 20-25 minutes, until the vegetables are tender and slightly charred.
Remove from the oven and let cool slightly.
Transfer the roasted vegetables to a blender. Add the garlic, honey, and lime juice. Blend until smooth.
Stir in the chopped cilantro. Taste and adjust seasoning if needed.
Serve with tortilla chips or as a topping for tacos.
