Ingredients

  • 2 cups Cherry Tomatoes halved
  • 1 Red Bell Pepper chopped
  • 1 Yellow Bell Pepper chopped
  • 1 Red Onion quartered
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 cup Cilantro chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cherry tomatoes, red bell pepper, yellow bell pepper, and red onion on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.
  3. Roast in the oven for 20-25 minutes, until the vegetables are tender and slightly charred.
  4. Remove from the oven and let cool slightly.
  5. Transfer the roasted vegetables to a blender. Add the garlic, honey, and lime juice. Blend until smooth.
  6. Stir in the chopped cilantro. Taste and adjust seasoning if needed.
  7. Serve with tortilla chips or as a topping for tacos.
