Ingredients 

Root Veggie Chips

  • 2 large Carrots sliced thin
  • 2 large Beets sliced thin
  • 2 large Sweet Potatoes sliced thin
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Use a mandoline slicer to thinly slice the carrots, beets, and sweet potatoes.
  3. Toss the sliced veggies in olive oil and salt.
  4. Spread the slices in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, flipping halfway through, until crispy.
  6. Let cool before serving.
