Sausage Mushroom And Hatch Chile Kolaches
Delicious kolaches filled with sausage, mushrooms, and Hatch chiles. Perfect for breakfast or a snack.

Kolache Dough
- 2 cups all-purpose flour
- 1 packet active dry yeast
- ¼ cup sugar
- ½ cup milk warmed
- ¼ cup butter melted
- 1 egg beaten
Filling
- ½ pound sausage crumbled
- 1 cup mushrooms chopped
- 2 Hatch chiles roasted and chopped
- 1 cup cheddar cheese shredded
In a mixing bowl, combine flour, yeast, and sugar.
Add warmed milk, melted butter, and beaten egg. Mix until a dough forms.
Knead the dough for about 10 minutes until smooth. Let it rise for 1 hour.
In a skillet, cook sausage until browned. Add mushrooms and Hatch chiles, cook until tender.
Preheat oven to 375°F (190°C).
Divide dough into 8 pieces. Flatten each piece and fill with sausage mixture and cheese. Seal edges.
Place kolaches on a baking sheet and bake for 15-20 minutes until golden brown.
