- 1 lb Russian fingerling potatoes washed and halved
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper freshly ground
- 2 cloves Garlic minced
- 1 tablespoon Fresh parsley chopped
Heat the olive oil in a large skillet over medium heat.
Add the potatoes, cut side down, and cook for about 10 minutes until they are golden brown.
Flip the potatoes, add the garlic, and cook for another 10 minutes until the potatoes are tender.
Season with salt and pepper, and sprinkle with fresh parsley before serving.
