Ingredients

  • 1 whole Acorn Squash peeled and cubed
  • 1 whole Sweet Dumpling Squash peeled and cubed
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • ½ teaspoon Nutmeg ground
  • ½ cup Heavy Cream optional

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. 2. Add the cubed acorn and sweet dumpling squash to the pot. Cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the vegetable broth, and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the squash is tender.
  4. 4. Use a blender to puree the soup until smooth. Return the soup to the pot.
  5. 5. Stir in salt, black pepper, and nutmeg. If using, add the heavy cream and heat through.
  6. 6. Serve hot, garnished with a sprinkle of nutmeg or a drizzle of cream, if desired.
