Ingredients 

Main Ingredients

  • 1 lb Brussels sprouts trimmed and halved
  • 1 lb Scallops fresh or thawed
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper freshly ground
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast Brussels sprouts for 20-25 minutes until tender and caramelized.
  4. Heat remaining olive oil in a skillet over medium-high heat. Sear scallops for 2-3 minutes on each side until golden brown.
  5. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  6. Combine roasted Brussels sprouts and seared scallops. Drizzle with lemon juice before serving.
