Ingredients 

Main Ingredients

  • 2 cups Brussels sprouts, shredded
  • 2 cups Kale, finely chopped
  • 1 cup Carrots, shredded
  • 0.5 cup Red onion, thinly sliced
  • 0.5 cup Dried cranberries
  • 0.25 cup Sunflower seeds

Dressing

  • 0.25 cup Olive oil
  • 2 tablespoon Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. In a large mixing bowl, combine the shredded Brussels sprouts, kale, carrots, red onion, dried cranberries, and sunflower seeds.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, and minced garlic. Season with salt and pepper to taste.
  3. Pour the dressing over the slaw and toss to coat evenly.
  4. Let the slaw sit for at least 10 minutes before serving to allow the flavors to meld.
