Main Ingredients
- 1 can Cannellini beans drained and rinsed
- 1 can Beets sliced
- 1 can Artichoke hearts quartered
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper freshly ground
In a large mixing bowl, combine the cannellini beans, sliced beets, and quartered artichoke hearts.
Drizzle with olive oil and lemon juice.
Season with salt and freshly ground black pepper to taste.
Toss everything together gently to combine.
Serve immediately or chill in the refrigerator for later.
