  • 1 lb Tomatillos husked and rinsed
  • 1 Onion quartered
  • 2 cloves Garlic peeled
  • 1 Jalapeño stemmed
  • 0.5 cup Cilantro chopped
  • 1 teaspoon Salt
  • 1 Lime juiced

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Place tomatillos, onion, garlic, and jalapeño on a baking sheet.
  3. Roast in the oven for 20 minutes or until tomatillos are soft and slightly charred.
  4. Transfer roasted vegetables to a blender. Add cilantro, salt, and lime juice.
  5. Blend until smooth. Taste and adjust seasoning if needed.
  6. Serve with tortilla chips or as a topping for your favorite dishes.
