Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can crushed tomatoes (400g)
  • 4 eggs
  • Salt and pepper to taste
  • Chopped cilantro or parsley for garnish

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell pepper. Cook until softened.
  3. Add minced garlic, cumin, and paprika. Cook for another minute.
  4. Pour in crushed tomatoes. Simmer for 10 minutes.
  5. Make small wells in the sauce and crack the eggs into each well.
  6. Cover and cook until eggs are set to your liking.
  7. Season with salt and pepper. Garnish with chopped cilantro or parsley.
