Spicy Korean Tofu Soup

Main Ingredients
- 1 block firm tofu cut into cubes
- 4 cups vegetable broth
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 2 cloves garlic minced
- 1 teaspoon sesame oil
- 1 cup kimchi chopped
- 2 stalks green onions sliced
1. Heat sesame oil in a large pot over medium heat.
2. Add minced garlic and cook until fragrant, about 1 minute.
3. Stir in gochujang and soy sauce, cooking for another minute.
4. Pour in vegetable broth and bring to a boil.
5. Add tofu cubes and chopped kimchi. Reduce heat and simmer for 20 minutes.
6. Garnish with sliced green onions before serving.
