Ingredients

  • 8 pcs Tomatoes halved
  • 1 pcs Onion quartered
  • 4 cloves Garlic peeled
  • 2 teaspoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Red pepper flakes
  • 2 cups Vegetable broth
  • 1 cup Heavy cream

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved tomatoes, quartered onion, and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, and red pepper flakes.
  3. Roast in the preheated oven for 30-35 minutes, until the vegetables are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender and blend until smooth.
  5. Pour the blended mixture into a large pot. Add the vegetable broth and bring to a simmer over medium heat.
  6. Stir in the heavy cream and cook for another 5-10 minutes, until heated through. Adjust seasoning if necessary.
  7. Serve hot, garnished with fresh basil or a drizzle of olive oil if desired.
