A simple and delicious spring onion soup recipe perfect for a light meal.

Main Ingredients
- 1 bunch Spring onions chopped
- 2 cloves Garlic minced
- 1 tablespoon Olive oil
- 4 cups Vegetable broth
- 1 cup Heavy cream
- to taste Salt and pepper
Heat olive oil in a pot over medium heat. Add chopped spring onions and minced garlic. Sauté until softened.
Add vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
Use a blender to puree the soup until smooth. Return to pot.
Stir in heavy cream and season with salt and pepper to taste. Heat through but do not boil.
Serve hot and enjoy!
