  • 4 large tomatoes tops cut off and insides scooped out
  • 1 cup cooked quinoa
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh basil
  • 2 tablespoon olive oil
  • 1 clove garlic minced
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked quinoa, feta cheese, chopped basil, olive oil, minced garlic, salt, and pepper.
  3. Stuff each tomato with the quinoa mixture and place them in a baking dish.
  4. Bake for 25-30 minutes, or until the tomatoes are tender and the filling is heated through.
  5. Serve warm and enjoy!
