- 4 large tomatoes tops cut off and insides scooped out
- 1 cup cooked quinoa
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh basil
- 2 tablespoon olive oil
- 1 clove garlic minced
- to taste Salt and pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cooked quinoa, feta cheese, chopped basil, olive oil, minced garlic, salt, and pepper.
Stuff each tomato with the quinoa mixture and place them in a baking dish.
Bake for 25-30 minutes, or until the tomatoes are tender and the filling is heated through.
