Ingredients 

Main Ingredients

  • 1 large banana squash
  • 2 cups leeks, sliced
  • 1 cup Gruyere cheese, grated
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. Cut the banana squash in half lengthwise and scoop out the seeds.
  3. Brush the cut sides of the squash with olive oil and place them cut side down in a baking dish.
  4. Bake for 30 minutes or until the squash is tender.
  5. While the squash is baking, sauté the leeks in a pan with a bit of olive oil until they are soft.
  6. Once the squash is done, remove it from the oven and turn it cut side up.
  7. Stuff the squash with the sautéed leeks and top with grated Gruyere cheese.
  8. Return the squash to the oven and bake for another 10 minutes or until the cheese is melted and bubbly.
  9. Season with salt and pepper to taste before serving.
