  • 2 cups Sweet Dumpling Squash, peeled and cubed
  • 1 cup Vegetable Broth
  • 1 cup Coconut Milk
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, cook until softened.
  2. 2. Add the cubed sweet dumpling squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender, about 20 minutes.
  3. 3. Stir in the coconut milk, salt, and pepper. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot and heat through. Adjust seasoning as needed. Serve hot.
