Sweet Dumpling Squash Soup

- 2 cups Sweet Dumpling Squash, peeled and cubed
- 1 cup Vegetable Broth
- 1 cup Coconut Milk
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, cook until softened.
2. Add the cubed sweet dumpling squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender, about 20 minutes.
3. Stir in the coconut milk, salt, and pepper. Use a blender to puree the soup until smooth.
4. Return the soup to the pot and heat through. Adjust seasoning as needed. Serve hot.
