Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • ¼ cup chopped walnuts
  • 2 tablespoon butter melted

Instructions 

  1. In a large mixing bowl, combine the mashed sweet potatoes, flour, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together the milk and eggs. Pour into the dry ingredients and mix until just combined.
  3. Fold in the chopped walnuts and melted butter.
  4. Heat a frying pan over medium heat and lightly grease with butter or oil.
  5. Pour ¼ cup of batter for each pancake onto the pan. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
