Ingredients 

Main Ingredients

  • 1 cup Shredded beef (machaca)
  • 6 Eggs beaten
  • 1 tablespoon Vegetable oil
  • 1 cup Onion chopped
  • 1 cup Tomato chopped
  • 1 teaspoon Salt to taste
  • 8 Corn tortillas

Instructions 

  1. Heat the oil in a skillet over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the chopped tomato and cook until soft.
  4. Add the shredded beef (machaca) and cook for a few minutes until heated through.
  5. Pour in the beaten eggs and stir continuously until the eggs are fully cooked.
  6. Season with salt to taste.
  7. Warm the corn tortillas in a separate skillet or microwave.
  8. Serve the machaca and egg mixture in the warm tortillas.
