Tamaulipas Style Machaca And Egg Tacos

Main Ingredients
- 1 cup Shredded beef (machaca)
- 6 Eggs beaten
- 1 tablespoon Vegetable oil
- 1 cup Onion chopped
- 1 cup Tomato chopped
- 1 teaspoon Salt to taste
- 8 Corn tortillas
Heat the oil in a skillet over medium heat.
Add the chopped onion and cook until translucent.
Add the chopped tomato and cook until soft.
Add the shredded beef (machaca) and cook for a few minutes until heated through.
Pour in the beaten eggs and stir continuously until the eggs are fully cooked.
Season with salt to taste.
Warm the corn tortillas in a separate skillet or microwave.
Serve the machaca and egg mixture in the warm tortillas.
