Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon Thai green curry paste
  • 1 can coconut milk
  • 1 can chickpeas, drained and rinsed
  • 4 cups spinach
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and ginger, and cook for another minute until fragrant.
  3. Stir in the Thai green curry paste and cook for another minute.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the chickpeas and spinach, and cook until the spinach is wilted, about 5 minutes.
  6. Stir in the soy sauce and lime juice. Season with salt and pepper to taste.
  7. Serve hot with rice or naan bread.
