Salad Ingredients
- 1 head Romaine lettuce chopped
- 1 cup Croutons
Dressing Ingredients
- ½ cup Cashews soaked
- ¼ cup Nutritional yeast
- 2 tablespoon Lemon juice freshly squeezed
- 1 tablespoon Dijon mustard
- 1 clove Garlic minced
- ½ cup Water
- to taste Salt
- to taste Black pepper
1. In a blender, combine soaked cashews, nutritional yeast, lemon juice, Dijon mustard, minced garlic, water, salt, and black pepper. Blend until smooth.
2. In a large mixing bowl, toss chopped romaine lettuce with croutons.
3. Pour the dressing over the salad and toss to coat evenly.
4. Serve immediately and enjoy!
