Ingredients 

Salad Ingredients

  • 1 head Romaine lettuce chopped
  • 1 cup Croutons

Dressing Ingredients

  • ½ cup Cashews soaked
  • ¼ cup Nutritional yeast
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 tablespoon Dijon mustard
  • 1 clove Garlic minced
  • ½ cup Water
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a blender, combine soaked cashews, nutritional yeast, lemon juice, Dijon mustard, minced garlic, water, salt, and black pepper. Blend until smooth.
  2. 2. In a large mixing bowl, toss chopped romaine lettuce with croutons.
  3. 3. Pour the dressing over the salad and toss to coat evenly.
