Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  2. 2. Fluff the couscous with a fork and transfer to a large mixing bowl.
  3. 3. Add the cherry tomatoes, cucumber, red onion, and parsley to the couscous.
  4. 4. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  5. 5. Toss everything together until well combined. Serve chilled or at room temperature.
