Cookie Dough
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup ground almonds
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ cup raspberry jam
- ¼ cup powdered sugar for dusting
Preheat oven to 350°F (175°C).
In a mixing bowl, cream together butter and sugar until light and fluffy.
Add vanilla extract and mix well.
In another bowl, whisk together flour, ground almonds, cinnamon, and salt.
Gradually add dry ingredients to the butter mixture, mixing until just combined.
Roll out dough on a floured surface to about ¼ inch thickness. Cut out cookies using a round cutter, then cut out the centers of half of the cookies with a smaller cutter.
Place cookies on a baking sheet and bake for 10-12 minutes, or until edges are lightly golden.
Let cookies cool completely. Spread raspberry jam on the whole cookies and top with the cut-out cookies. Dust with powdered sugar.
