- 1 cup Coconut milk
- 2 tablespoon Green curry paste
- 1 Red bell pepper, chopped
- 1 Yellow bell pepper, chopped
- 1 Zucchini, sliced
- 1 Red onion, chopped
- 1 tablespoon Olive oil
- to taste Salt
- to taste Black pepper
1. Preheat your grill to medium-high heat.
2. In a bowl, mix coconut milk and green curry paste.
3. Thread the chopped vegetables onto skewers.
4. Brush the veggie skewers with olive oil and season with salt and pepper.
5. Grill the skewers for about 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
