Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Zucchini, chopped
  • 1 cup Green beans, trimmed and cut
  • 1 can Diced tomatoes
  • 6 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 Lime, cut into wedges for serving

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the carrots, zucchini, and green beans. Cook for about 5 minutes, stirring occasionally.
  5. Stir in the diced tomatoes and vegetable broth. Bring to a boil.
  6. Reduce the heat and let it simmer for about 25 minutes, or until the vegetables are tender.
  7. Season with salt and black pepper to taste.
  8. Serve hot with lime wedges on the side.
