Vegetarian Irish Lentil Guinness Stew

Main Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 1 cup green lentils, rinsed
- 1 can Guinness beer
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until softened.
Add the carrots, potatoes, and celery. Cook for about 5 minutes.
Stir in the lentils, Guinness, vegetable broth, thyme, and rosemary.
Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils and vegetables are tender.
Season with salt and pepper to taste before serving.
