Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups carrots, chopped
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 1 cup green lentils, rinsed
  • 1 can Guinness beer
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the carrots, potatoes, and celery. Cook for about 5 minutes.
  4. Stir in the lentils, Guinness, vegetable broth, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils and vegetables are tender.
  6. Season with salt and pepper to taste before serving.
