Vegetarian Meatball Tortilla Soup
A hearty and flavorful vegetarian soup with meatballs and tortilla strips.

Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 4 cups Vegetable broth
- 1 can Diced tomatoes (14.5 oz)
- 1 can Black beans, drained and rinsed (15 oz)
- 1 cup Corn kernels fresh or frozen
- 1 cup Vegetarian meatballs pre-cooked
- 1 cup Tortilla strips for garnish
- 1 Avocado, sliced for garnish
- 1 Lime, cut into wedges for garnish
- 1 tablespoon Cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, ground cumin, and chili powder. Cook for another minute.
Pour in vegetable broth and diced tomatoes. Bring to a simmer.
Add black beans, corn kernels, and vegetarian meatballs. Simmer for 10-15 minutes.
Serve hot, garnished with tortilla strips, avocado slices, lime wedges, and chopped cilantro.
