Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 4 cups Vegetable broth
  • 1 can Diced tomatoes (14.5 oz)
  • 1 can Black beans, drained and rinsed (15 oz)
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Vegetarian meatballs pre-cooked
  • 1 cup Tortilla strips for garnish
  • 1 Avocado, sliced for garnish
  • 1 Lime, cut into wedges for garnish
  • 1 tablespoon Cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, and chili powder. Cook for another minute.
  4. Pour in vegetable broth and diced tomatoes. Bring to a simmer.
  5. Add black beans, corn kernels, and vegetarian meatballs. Simmer for 10-15 minutes.
  6. Serve hot, garnished with tortilla strips, avocado slices, lime wedges, and chopped cilantro.
