Ingredients 

Main Ingredients

  • 4 cups leeks, white and light green parts only, cleaned and sliced
  • 2 cups potatoes, peeled and diced
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • to taste salt
  • to taste white pepper
  • to garnish chives, chopped

Instructions 

  1. 1. In a large pot, melt butter over medium heat. Add leeks and cook until soft, about 5 minutes.
  2. 2. Add potatoes and stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. 3. Puree the soup in batches in a blender until smooth. Return to pot.
  4. 4. Stir in cream, and season with salt and white pepper. Chill in the refrigerator for at least 2 hours before serving.
  5. 5. Serve cold, garnished with chopped chives.
