  • 2 lbs Potatoes peeled and cubed
  • 1 cup Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Chopped Green Onions
  • ¼ cup Chopped Fresh Parsley

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool slightly.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, salt, and black pepper.
  3. 3. Add the warm potatoes to the bowl and gently mix to coat.
  4. 4. Stir in the chopped green onions and parsley. Serve warm.
