Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 lb Brussels sprouts trimmed and halved
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice freshly squeezed
  • ¼ cup parmesan cheese grated

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Cook the quinoa: In a saucepan, bring the water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  3. Roast the Brussels sprouts: Toss the Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes, until golden and tender.
  4. In a large mixing bowl, combine the cooked quinoa, roasted Brussels sprouts, lemon juice, and grated parmesan cheese. Toss to combine.
  5. Serve warm and enjoy!
