Watermelon Gazpacho Recipe
A refreshing and light summer soup made with watermelon and a mix of fresh vegetables.

Main Ingredients
- 4 cups Watermelon, cubed
- 1 cup Cucumber, diced
- 1 cup Tomato, diced
- 0.25 cup Red onion, diced
- 1 tablespoon Red wine vinegar
- 2 tablespoon Olive oil
- to taste Salt
- to taste Black pepper
- 1 tablespoon Fresh mint, chopped
1. In a blender, combine watermelon, cucumber, tomato, red onion, red wine vinegar, and olive oil.
2. Blend until smooth. Season with salt and black pepper to taste.
3. Chill in the refrigerator for at least 1 hour before serving.
4. Garnish with fresh mint before serving.
