White Bean Soup With Meyer Lemon
A refreshing and hearty white bean soup with a hint of Meyer lemon.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans white beans, drained and rinsed
- 1 Meyer lemon, zested and juiced
- to taste salt and pepper
- ¼ cup fresh parsley, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the vegetable broth and bring to a boil.
Add the white beans and reduce the heat to a simmer. Cook for 20 minutes.
Stir in the Meyer lemon zest and juice. Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
