Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 Meyer lemon, zested and juiced
  • to taste salt and pepper
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the white beans and reduce the heat to a simmer. Cook for 20 minutes.
  6. Stir in the Meyer lemon zest and juice. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
