  • 1 whole Chicken about 4-5 pounds
  • 1 pound Red Potatoes cut into chunks
  • 1 pound White Potatoes cut into chunks
  • 1 pound Blue Potatoes cut into chunks
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Thyme

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large roasting pan, place the chicken in the center.
  3. Arrange the red, white, and blue potatoes around the chicken.
  4. Drizzle the olive oil over the chicken and potatoes.
  5. Season with salt, pepper, garlic powder, paprika, and dried thyme.
  6. Roast in the preheated oven for about 90 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Let the chicken rest for 10 minutes before carving. Serve with the roasted potatoes.
